A juice groove around the edge catches whatever runs off a carved roast or sliced tomatoes, and at 15.5 by 10 inches there is room for a full charcuterie spread for four to six. Olive wood is dense and close-grained, so it stands up to daily cutting while staying kind to knife edges.
15.5 × 10 × 0.7 in. Hand wash and dry straight away; never soak it or put it in the dishwasher. Rub in a little food-safe mineral oil every few months to keep the grain rich.

Wood and bamboo: hand wash in warm water and dry straight away. Never leave it soaking or put it in the dishwasher. Rubbing in a little food-safe mineral oil every few months keeps the grain from drying out.
